Moroccan Carrot Salad

Ingredients

    medium carrots, peeled and thickly sliced

  • 1

    garlic clove, finely minced or mashed through a garlic press

  • 2

    tablespoons fresh cilantro, finely chopped

  • 2

    tablespoons fresh flat-leaf parsley, finely chopped

  • 2

    tablespoons Mina extra virgin olive oil

  • 2

    tablespoons Mina harissa

  • ½

    teaspoon cumin

  • Salt and black pepper, to taste

Preparation

  • Step 1

    In a pot, boil sliced carrots on medium-low heat for 15 minutes or until fork-tender. Drain, let cool, and place in bowl.

  • Step 2

    Add all other ingredients and gently mix. Serve and enjoy!
