cup Mina extra-virgin olive oil, plus more for greasing the pan

Preparation

Step 1
Heat oven to 350 degrees Fahrenheit. Line the bottom of a 9-inch springform pan with parchment paper and grease sides with olive oil.

In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt. Add the olive oil, eggs, coffee, and vanilla and mix well.

Pour the batter into the prepared pan. Bake for 35 to 40 minutes. Remove from oven and let cool.
