ripe avocado

tablespoon Mina green harissa

tablespoon Mina extra-virgin olive oil

teaspoon lemon juice

large eggs

slices of whole-grain bread, toasted

Red pepper flakes and black pepper, to taste

Maldon sea salt or fleur de sel finishing salt, to taste
Preparation

Step 1
In a small bowl, combine avocado, green harissa, olive oil, lemon juice, and salt and pepper. Gently mash with a fork, keeping the avocado as chunky as possible.

Step 2
Fry eggs sunny side up over medium heat. While eggs are frying, spread mashed avocado mixture on top of toasted bread.

Step 3
Add the fried eggs on top of the avocado toast and sprinkle on red pepper flakes, freshly cracked pepper, and Maldon sea salt or fleur de sel. Serve immediately. Enjoy!
