Greek Salad with Olives and Capers


  • 3

    large ripe tomatoes, cut into wedges

  • 3

    mini cucumbers or 1 large cucumber, sliced

  • ½

    red onion, sliced

  • 1

    green bell pepper, seeded and sliced

  • 4

    ounces Mina purple Beldi olives, whole or halved

  • 3

    tablespoons Mina capers

  • 1

    handful of parsley leaves

  • ¼

    cup Mina extra-virgin olive oil

  • 3

    tablespoons red wine vinegar or apple cider vinegar

  • 4

    ounces feta cheese, cubed

  • Pinch of oregano (optional)

  • Salt and pepper


  • Step 1

    In a large bowl, add tomatoes, cucumbers, onion, bell pepper, olives, capers, and most of the parsley (save some for garnish). 

  • Step 2

    Dress vegetables with olive oil, vinegar, and salt and pepper, and gently toss to combine.

  • Step 3

    Arrange dressed salad on a large serving plate and garnish with feta, oregano, and remaining parsley. Enjoy!
