Our difference begins with our early harvest. While late-harvest, overripe olives yield a greater volume of oil, our young olives deliver superior quality, lower acidity and higher polyphenol content.
Cold Extraction
Unlike conventional pressing methods that squeeze the fruit, we use a cold-extraction system that separates the oil from the fruit more, by spinning. Our olives remain cool, below 81 degrees, throughout processing to preserve their nutrient properties and protect every nuance of delicate flavor.
